Monkey Business Sundae
Serves 4
½ cup superfine sugar
¼ cup butter
¼ cup heavy cream
1 tbsp smooth peanut butter
4 small or 2 large bananas
1 cup pretzels
½ cup macadamia nut halves
2 pints good quality vanilla ice cream
First, make the sauce. Place the sugar, and 2 tbsp of water into a medium-sized, heavy based saucepan and place over a medium heat. Cook the sugar, without stirring, for 5-7 minutes, or until it turns a golden-amber colour. Remove the pan from the heat and carefully add the butter and cream – the pan will sputter up and steam. Once it calms down, place back over the heat and stir until everything is combined and the mixture comes back to a boil. Remove from the heat, stir through the peanut butter, and set aside. Peel and slice the bananas, either into long halves, or rounds (or a mixture). Take about ¼ of the pretzels, and crush them into small pieces. Chop the macadamia nuts, leaving some pieces large for variety. Place a quarter of the banana, into each bowl, and sprinkle over the crushed pretzels. Top with two scoops of ice cream each, and then pour a generous drizzle of sauce over each bowl.
Sprinkle the remaining pretzels and the macadamia nuts over the top, and serve!
