American Father’s Day is coming up. I specify, because when you have family that doesn’t live in America, you realize that you unknowingly miss all sorts of major holidays. Whoops! Anywhoo, what better way to treat your dad than a delicious breakfast of BACON AND CHEDDAR WAFFLES and homemade syrup. It’s the best of all worlds coming together to form the world’s most perfect breakfast world. I like to call it a Ron Swanson, Leslie Knope, Buddy the Elf compromise.

Father’s Day Cheddar Bacon Waffles
2 eggs
2 cups all purpose flour
1 3/4 c. milk
1/2 c. melted butter
1 T. sugar
4 t. baking powder
1/2 t. salt
1 t. maple extract
1 c. shredded cheddar cheese
3/4 c. fully cooked bacon pieces
1. Combine all dry ingredients
2. Combine all wet ingredients
3. Stir the wet ingredients into the dry ingredients
4. Stir in bacon and 3/4 c. cheese
5. Cook waffle batter in waffle maker, just before the waffle batter in fully cooked, open the waffle maker and sprinkle a little cheese on the waffle, close the waffle maker again
6. Once the cheese is crispy the waffle is done! Yum!
Maple Syrup:
1 c. brown sugar
1 c. sugar
3/4 c. water
1 T. molasses
1 1/2 T maple extract
1. Combine all ingredients in a pot on the stove
2. Bring to boil
3. Turn down heat to medium heat and allow to simmer for 5 minutes
4. Serve hot over cheddar bacon waffles!
