Our Grand Tour took us to Rio de Janeiro to celebrate the launch of our Lime Ricki swimsuit collection inspired by their iconic beaches. It reminded me of my time spent there and the amazing fresh juices they are so famous for on every corner. Their pineapple lime juice is one that I still think of to this day. We shared this recipe about 10 years ago during the World Cup and I’m bringing it back because it’s such a classic. Few other beverages can rival the exotic and invigorating flavors of Brazilian pineapple lime juice. This tropical delight, known as “Suco de Abacaxi com Limão” in Portuguese, combines the sweetness of ripe pineapples with the tangy zest of fresh limes. Brazilian pineapple lime juice

- Half of a ripe pineapple
- 4 limes
- 2/3 cup sugar
- 4 cups of water
- Ice cubes
- Fresh mint (optional, for garnish)

Selecting the Perfect Pineapple
- The first step to making delicious pineapple lime juice is selecting a ripe and juicy pineapple. Look for a pineapple with a sweet aroma, which indicates ripeness. The skin should be firm but slightly yielding to the touch, and the leaves should be green and fresh-looking. Avoid pineapples with brown, wilted leaves or soft spots on the skin.
Preparing the Pineapple
- Peel and Core the Pineapple: Start by cutting off the top and bottom of the pineapple. Stand the pineapple upright and carefully slice off the skin, following the contours of the fruit. You don’t need to be careful about removing the eyes of the pineapple as those will be sifted out afterwards. Cut the pineapple into quarters lengthwise, then remove the core from each quarter. Finally, chop the pineapple flesh into small chunks.
- Blend the pineapple in a blender.
- After done blending, grab bowl and pour mixed water and pineapple through strainer. (this is where you will get rid of those brown spots). Try to get as much juice strained as possible. Use the back of a spoon to press the pulp and extract as much juice as possible.
- Add strained juice back into blender.
- Add 2/3 cup of sugar (depending on how sweet you want your juice–add sugar to taste).
Juicing the Limes
- Roll the limes on the countertop with your palm to soften them, which will make juicing easier. Cut the limes in half and squeeze the juice into the blender. If you prefer a stronger lime flavor, you can add more lime juice to taste.
- Blend the sugar, limes, and pineapple juice together once again. You can adjust the amount of sugar based on your preference and the sweetness of the pineapple.

- Fill glasses with ice cubes and pour the pineapple lime juice over the ice. Garnish with fresh mint leaves for an extra touch of elegance and flavor. Serve immediately and enjoy the refreshing taste of this tropical beverage.
