We’re on day 2 of Popsicle the Rainbow with Popsicle Master, Trisha Zemp, and this one was delicious! See, the fun part of creating this series is all the “work” we have to do like experimenting tasting flavors. Trisha nailed it with this one.

Strawberry Coconut:
- 400ml can coconut milk
- 16oz package hulled strawberries
- 1/2C sugar
- 1/4tsp coconut extract
- 1/3C water
Add all ingredients to a pot, and bring to a boil. Let boil for 2 min, turn heat down and let mixture simmer until strawberries are soft. Let mixture cool. Blend together. Fill molds. Freeze. Enjoy!
